These delicious muffins are easy to make and perfect for snacking on the go, packed with juicy fresh cherries.
Preheat the oven to 200°C and line a muffin tin with paper liners. In a bowl, combine the flour, 150g of sugar, baking powder and salt.
In a separate bowl, whisk together the oil, milk, egg and almond extract. Gently mix both bowls together until the wet and dry ingredients are well combined. Fold in the cherries.
Slowly spoon the batter into the muffin paper liners about ⅔ full and sprinkle with sugar on top of each muffin.
Bake muffins in the preheated oven for 20 minutes until a wooden toothpick inserted into the center comes out clean. Once cooked, transfer to a wire rack to cool before serving.
140g fresh cherries
200g plain flour
150g sugar
2 tsp baking powder
½ tsp salt
80ml vegetable oil
80ml milk
1 egg
½ tsp almond extract
1 tbsp sugar
