
For a twist on the classic fizz recipe this festive season, try this cherry-based version. It’s a beautiful pink colour and the freshness of the cherries give it a real lift. You can skip the kirsch if you want a lighter version.
Place the cherries and the orange juice in a blender and blend until smooth. Push through a fine sieve into a jug to remove any bits. Chill in the fridge until ready to use.
When ready to serve, place 25ml kirsch in each glass and add two tablespoons of cherry puree to champagne glasses. Top with prosecco and garnish the side of the glass with a whole cherry.
80g fresh cherries, pitted
Juice of ½ orange
150ml kirsch
300ml prosecco, cava or champagne
Whole fresh cherries to garnish
